1. Raspberry cheesecake

Ingredients

  • 1/2 cup Greek yogurt (100 g)
  • 1 cup low-fat cream cheese (200 g)
  • 2 eggs
  • 1/2 cup skim milk (125 ml)
  • 2 egg whites
  • 2 tablespoons honey (50 gr.)
  • 1 cup oats (100 gr.)
  • 1 ripe banana
  • 1/2 tablespoon cinnamon (8 gr.)
  • 1/2 cup raspberries (75 g)
  • 2 tablespoons liquid stevia (30 ml)
  • 1/4 cup water (50 ml)

Preparation

  • The first thing to make is the base. Therefore, mix the oats, cinnamon and banana in a bowl.
  • Then pour this mixture into a floured baking tin and place in the oven for 10 minutes at about 160ºC. Then keep it in the fridge.
  • Now mix the cream cheese with the milk, yogurt and honey in a bowl.
  • Then add the eggs one at a time and also the egg whites.
  • Then pour this mixture into the mold with the previously made base and put it in the oven at the same temperature for 10 minutes. Then put it back in the fridge.
  • Now it’s time to put the raspberries, stevia and a cup of water in a pan. Mix over low heat until you have a jam-like consistency.
  • Now remove the baking tin filled with cheesecake filling from the refrigerator and pour a thick layer of the raspberry mixture on top.
  • Finally, garnish with some mint leaves and serve.

2. Neapolitan pudding

  • 4 eggs
  • 2 tablespoons honey (50 gr.)
  • the white of 4 eggs
  • 2 tablespoons vanilla extract (30 ml)
  • 2 1/4 glass of skim milk (450 ml)
  • 1 teaspoon stevia (5 ml)
  • 1/4 glass of water (50 ml)

Preparation

  • First, beat the eggs and the whites of the eggs in a bowl. Once it foams, add the honey and vanilla as well.
  • Then add the milk and mix well.
  • Take a mold and sprinkle it with wheat flour or rice flour so that the dessert does not stick. Pour in the mixture.
  • Then place the mold in the oven at 180 C for 30 minutes. Use a knife or cocktail stick to check for doneness.
  • Now place a pan over a medium heat and pour in the stevia and water until it caramelizes. It should be a golden color. Remember that this is not sugar, so the color and texture will vary slightly.
  • Finally, remove the pudding from the mold and pour the caramel on top.

Ingredients

  • 1/2 cup sweet potato (100 g)
  • 1 tablespoon baking powder (15 gr.)
  • 1 cup oats (100 gr.)
  • 1/4 cup skim milk (50 ml)
  • 2 eggs
  • 1 medium bar of dark chocolate (150 gr.)
  • 2 tablespoons vanilla extract (30 ml)
  • 2 tablespoons honey (50 gr.)

Preparation

  • First, boil the sweet potato in a pan. Once the potato is soft, remove it from the heat, drain and mash.
  • Then add the eggs, baking powder, milk and oats. Mix everything well so that there are no lumps.
  • Then add the honey and vanilla extract. Mix this together, you will now have a thick dough.
  • Sprinkle the muffin tins with some flour and put some dough in each tin. Also grate some dark chocolate and sprinkle each mold with it.
  • Finally, put this in the oven for 20 minutes at about 170 ºC.
  • Then remove them and let them cool.
