1. Glazed chicken with sherry and mushrooms

Ingredients

  • 250 grams sliced ​​mushrooms
  • 200 grams of chicken breast
  • 15 ml olive oil
  • 100 ml dry sherry
  • whole wheat flour
  • 100 ml chicken stock
  • 30 grams dried tarragon
  • 2 celery sticks
  • half a finely chopped onion
  • salt and pepper to taste

Preparation

  • Cut the chicken breast into strips, add salt and pepper to taste, and coat them in the flour.
  • Add olive oil to a frying pan and when it is hot, fry the chicken breast pieces until golden brown on both sides. It takes about six or seven minutes. When they’re done, remove them from the heat and set them aside.
  • Fry the celery, onion and mushrooms in the same pan, using the same oil. Bake them for a few minutes.
  • Then add the chicken stock, along with the tarragon and sherry.
  • Bring to a boil over high heat and keep stirring until a thick sauce forms.
  • Add the chicken to the sauce, reduce the temperature and continue stirring for a few minutes. The sauce should completely cover the chicken.

2. Glazed chicken with sherry and mushrooms without flour

Ingredients

  • 120 grams mushrooms
  • 125ml sherry
  • 250ml water
  • 150 grams of chicken thighs
  • 30 ml olive oil
  • a finely chopped onion half
  • a clove of garlic
  • salt and pepper to taste

Preparation

  • Heat the olive oil in a frying pan. Season the chicken and put it in the pan when the oil is hot.
  • Add the garlic and onion to the pan, along with the water and sherry.
  • Let it cook for a few minutes, until the chicken becomes tender.
  • Slice the mushrooms and put them in the pan.
  • Let it cook for ten minutes and add more salt if needed.

3. Glazed chicken with sherry and garlic

Ingredients

  • 1 garlic clove
  • 1 whole 1 pound chicken, sliced
  • 200 ml sherry (you can also use white wine)
  • a few sprigs of parsley
  • oil
  • salt and pepper (to taste)

Preparation

  • Wash the chicken and season the meat with salt and pepper.
  • Put oil in a frying pan and add the chicken when it is hot. Fry the chicken until golden brown and then set it aside.
  • Finely chop the garlic and parsley and fry them in a pan over medium heat.
  • Add the fried chicken to the pan, along with the sherry (or white wine).
  • Bring to a boil and simmer for 25 minutes or until chicken is tender.
  • Keep stirring and add more salt if necessary.

4. Glazed Chicken with Sherry and Orange

Ingredients

  • the juice of an orange
  • a large chicken, sliced ​​(about 1.5 kg)
  • a small onion
  • 150 ml sweet sherry
  • a small tomato
  • 150 grams ground Serrano ham
  • a pinch of cinnamon
  • olive oil
  • a tablespoon of flour
  • 400ml water
  • salt and pepper to taste

Preparation

  • First, season the chicken with salt and pepper.
  • Then put the oil in a frying pan and add the chicken when it is hot. Fry the chicken until golden brown, remove it from the pan, then set it aside.
  • Cut the onion and tomato into cubes and then put them in the same pan you fried the chicken in. When the water evaporates from the tomato, add the flour and stir for a minute.
  • Add the chicken, water, orange juice, sherry, ham and cinnamon.
  • When the liquid starts to boil, reduce the heat and put a lid on the pan.
