  • 3 eggs
  • 1 ripe plantain (300 g)
  • Vegetable oil (to taste)

Instructions

  • Peel the plantain and then cook it until it is soft.
  • Mash the cooked plantain into a paste with a fork, then add one egg and salt.
  • Make small balls of the dough.
  • Sprinkle the breadcrumbs in a plate.
  • Beat the two remaining eggs with a pinch of salt.
  • Dip the balls in the beaten egg and then roll them in the breadcrumbs.
  • Finally, fry the balls in hot oil and then place them on kitchen paper to drain the fat.

2. Plantain croquettes with cheese

Ingredients

  • 1 egg
  • 1 ripe plantain (300 g)
  • Grated cheese (to taste)
  • 1 spring onion (20 g)
  • 1 tablespoon butter (20 g)
  • Salt, cumin and vegetable oil (to taste)
  • 1 packet breadcrumbs (200 g)

Instructions

  • First peel the plantain and cut it into slices. Then cook the plantain until it is soft.
  • Then mash the cooked plantain with a fork into a dough together with the egg, some breadcrumbs and salt. Mix until you get a nice texture.
  • First, finely chop the spring onion and fry it in the butter. Then season with salt and a pinch of cumin.
  • Remove the pan from the heat and then add the grated cheese. Set aside.
  • First make small balls of the plantain dough, then flatten them, and then put a little of the spring onion/cheese mixture on top. Finally, fold the dough and roll it back into a ball.

3. Plantain croquettes with green olives

Ingredients

  • 2 eggs
  • A splash of milk
  • 2 ripe plantains (600 g)
  • 6 cups chicken stock
  • 1/2 cup grated cheese (50 g)
  • 2 cups flour (200 g)
  • 1 packet breadcrumbs (200 g)
  • 3 tablespoons of butter (30 g)
  • Chopped green olives (to taste)

  • Peel the plantain and cut into large pieces
  • Then cook the plantain in the chicken stock until it is soft and golden brown.
  • First, mash the plantain with a fork. Then add butter and salt and stir until well combined.
  • Make small balls and then fill them with cheese and olives.
  • Sprinkle the flour on one plate, then the breadcrumbs on another plate, and finally the beaten eggs on a third plate, along with a splash of milk and salt.
  • Then roll each ball first in the flour, then in the egg, and finally in the breadcrumbs. Finally, fry them in hot oil.

Ingredients

  • 1 egg
  • 2 tomatoes (60 g)
  • 1 onion (30 g)
  • 1 clove of garlic
  • 2 ripe plantains (80 g)
  • Salt and vegetable oil (to taste)
  • 1 packet breadcrumbs (200 g)

Instructions

  • Peel the plantains, cut them into pieces and then cook them until they are soft.
  • Then mash the cooked plantain with a fork.
  • Finely chop the onion and garlic.
  • Deseed the tomatoes and then cut them into cubes.
  • Pour the oil into the pan and then fry the onion, garlic and tomato for a few minutes. Then add the salt.
  • Add the mashed plantain to the pan and stir everything together.
  • Let everything cool in the fridge for 15 minutes (longer if possible) and then roll into small balls.
